Make It Monday: passing afternoon... cranberry pomegranate pop!

My favorite way to pass a day is with a house full of kids and a kitchen in full swing. We tested out some recipes today - here's a great cranberry sauce for Thanksgiving you may want to try...


Cranberry Pomegranate Sauce

  • 1 12oz bag of fresh cranberries
  • 1/2 cup pomegranate seeds and 1/2 cup pomegranate juice
  • 2 Tbls navel orange rind, chopped fine
  • 1/2 cup orange juice
  • 1/2 cup packed brown sugar
  • 2 tsp Cointreau liqueur (optional) 
Method:

Combine all ingredients in a medium saucepan and simmer for about 10 minutes over medium heat, stirring occasionally. Listen to the cranberries pop and you'll know it's ready when most have popped. Allow to cool and serve room temperature or chilled.
