Make It Monday: Spain

tortilla con patatas is one of my favourite spanish tapas dishes and this week i had a first hand lesson on how to make it.
1 large onion (diced)
approx 6 medium sized potatoes (diced)
1 egg per person and one extra
pinch of salt
in a frypan place chopped onion with one cup of water and cook until the onion is transparent
in a deep fryer or oven cook potatoes until golden brown
crack eggs into bowl and whisk - add a pinch of salt
when onions are cooked place in egg mixutre 
when potatoes are ready place them into the egg & onion mixture, stir and leave for 5 minutes 
heat frypan over a medium heat and rub with oil
note: marta's frypan was 25cm by 5cm deep
cook first side of tortilla, when you can slide the egg flip around the edges it it ready to turn
umm .. this is the tricky part
flip tortilla!

turn off heat, you can leave for a few minutes to keep warm but it is equally yummy served cold.
