Make It Monday - Peach Perfection

          served here with English custard and a dollop of strawberry preserve

I'm not gonna lie to you, this dessert is neither fat free nor quick but it is exceedingly good.  Our family of four disagrees on what's the best part ( I think it's the warm peaches that taste like summer)...

-PMK twin B says "It's the warm fruit with the crunchy crust!"
- Pluff Mud Daddy says " It's the peaches and Kentucky bourbon!" (well, he would say that, wouldn't he?)

There's something here for everyone to love. Gather your ingredients and give it a try.


  • Preheat oven to 350 degrees. Combine the softened butter and brown sugar with 1 cup granulated sugar and beat at medium speed until creamy. Add the 4 eggs one at a time beating well with each addition. Add the vanilla.
  • Stir together baking powder, salt and 3 cups flour. Gradually add this to the butter mixture until blended. Spread 3/4 of the batter into a greased 13x9 inch pan. Layer the washed and quartered strawberries evenly on top of the batter.
  • Combine remaining 1/2 cup sugar and 1/4 cup flour in a medium bowl with the peaches (cubed) and bourbon. Stir well to coat the peaches. Spoon over the strawberries.
  • Spread the remaining batter over the top of the peach mixture evenly with a knife.
  • Bake at 350 for 1 hour until golden brown and bubbly. Cool and cut into bars. Serve with cream or ice cream.
